What You'll Need

  • 2 acorn squashes
  • 3 apple (tart, such as Granny Smith)
  • 1/2 cup plus 1 to 2 tablespoons butter (melted)
  • 1/2 cup honey
  • salt to taste

How to Make It

  1. Wash squashes and halve lengthwise; scoop out seeds and scrape out fibers.
  2. Put halved squashes into a baking dish, cut side down.
  3. Put the baking dish on the oven rack and add about 1/2 inch of boiling water to the dish. Bake at 400 F for 20 minutes.
  4. While acorn squashes are baking, prepare the apple stuffing.
  5. Peel, core, and dice the apples.
  6. Mix apples with 1/4 cup melted butter and the honey.
  7. Turn acorn squash halves cut side up and brush with melted butter then sprinkle with salt.
  1. Fill each acorn squash half with apple and honey mixture.
  2. Cover pan with aluminum foil and continue baking at 400 F for 30 minutes longer, until squash and apples are tender.
