Use a tart apple in this easy recipe for Apple Pork Chops; Granny Smith or Macintosh would work well. I especially like Granny Smith apples because they have a nice firm and crisp texture and they don't turn brown as quickly as other varieties.

You can add more ingredients to this simple three ingredient recipe if you'd like. (The salt, pepper, butter, and brown sugar don't count as ingredients; you should always have those on hand!) You could saute some onions and garlic in butter and add to the pork chops, or add some peeled (or unpeeled) cubed potatoes. Add some dried herbs; marjoram or thyme would be delicious. Tiny creamy potatoes would be good too. They will bake in the same time that it takes the apples and pork chops to bake.

All you need to add to this meal is a green salad tossed with avocados, sliced mushrooms, and cherry or grape tomatoes. Or try Pear and Greens Salad for a nice contrast. Some garlic toast or scones are a nice addition, but aren't really necessary.

What You'll Need

  • 4 boneless pork chops (3/4" thick)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 apples (peeled and chopped)
  • 2 tablespoons butter
  • 3 tablespoons brown sugar

How to Make It

Preheat the oven to 350°F. Place the pork chops in a glass or metal baking dish and sprinkle with the salt and pepper. (Don't peel and chop apple until pork chops have been in the oven for 25 minutes.) Cover dish and bake the chops at 350 degrees F. for 30 minutes.

Uncover the dish and place some of the chopped apple on top of each chop. Dot with the butter and sprinkle with the brown sugar. Return the pan to the oven and bake, uncovered, for another 10 to 15 minutes until the pork chops are glazed and cooked to at least 145°F.
