Basic Apple Walnut Cake

This apple cake is an easy one-layer cake made with brown sugar, walnuts, and optional raisins. You could also add dried cranberries the batter in place of the raisins. If you prefer pecans, replace the walnuts with some chopped pecans. Or make it with chopped hazelnuts.

The cake would be wonderful with a vanilla frosting or cream cheese frosting, whether homemade or purchased. Or top it with this fluffy caramel frosting.

What You'll Need

  • 1 1/3 cups light brown sugar, firmly packed
  • 1/2 cup melted margarine
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 2 cups finely chopped apple
  • 1 cup chopped walnuts
  • Optional: 1 cup raisins or dried cranberries

How to Make It

  1. Preheat the oven to 350 F.
  2. Grease and flour a 9-by-13-by-2-inch baking pan.
  3. In a large mixing bowl, combine sugar and melted margarine. Beat in eggs and vanilla with a whisk or wooden spoon.
  4. Into another bowl sift the flour, baking soda, baking powder, and cinnamon. Stir into egg mixture, alternating with the  milk. Fold the apples into the batter along with the chopped walnuts and raisins, if using.
  1. Spoon the batter into prepared pan. Bake in the preheated oven for about 45 minutes, or until cake springs back when gently pressed with ​a finger.
  2. Let cool in pan on rack. Frost with cream cheese frosting or a caramel frosting. Makes about 20 servings.
