Use a good firm apple in this. Granny Smith, Golden Delicious, Gala, and Jonagold are good choices.
Feel free to add some crunch to the apples with chopped toasted pecans or walnuts, or sprinkle granola over the apples.
- 2/3 cup sugar
- 1/2 cup water
- 1/2 cup honey
- 1 1/2 teaspoons cinnamon
- Optional: a few drops red food coloring
- 3/4 cup raisins
- 6 medium to large apples
In a large, deep saucepan or Dutch oven, combine the sugar, water, honey, cinnamon, food coloring, if using, and raisins; bring to a boil. Reduce heat to low.
Peel and core the apples; add to the syrup. Spoon some of the syrup over the apples.
Cover and simmer in the hot syrup until the apples are tender, about 15 to 20 minutes.
Wit ha slotted spoon, place apples in dessert bowls. To serve, use a slotted spoon to spoon raisins in center of each apple.
Spoon syrup over each serving.

- Use 1/4 cup of brown sugar and 1/4 cup of maple syrup instead of honey.
