What You'll Need

  • 2 Tbs. butter, plus extra for the casserole dish
  • 1 pound fresh
  • asparagus, trimmed, cut into 2-inch pieces
  • 1 1/4 cup milk
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 3/4 tsp. sugar
  • 1 tsp. chopped
  • fresh thyme
  • 1 tsp. salt
  • Pinch of fresh ground black pepper
  • 1 Tbs. lemon zest

How to Make It

1. Preheat the oven to 350°F. Heat 2 Tbs. of the butter in a large skillet over medium-high heat. When the butter foams, add the asparagus and cook, stirring often, for 2 minutes. Transfer the asparagus to a buttered 2-quart casserole dish.

2. In a large bowl, whisk together the milk, eggs, flour, sugar, thyme, salt, pepper, and lemon zest to form a light, thin batter. Pour the batter over the asparagus.

3. Bake for 45 minutes, or until the asparagus pie is puffed and browned around the edges, and the center is set. Allow to cool to room temperature before serving.
