A great dog for game night or any old cookout. This recipe isn't for the faint of heart and calls for a homemade cheese sauce, which you can adjust to your liking.

What You'll Need

  • 6 large beef hot dogs
  • 6 strips bacon
  • 6 hot dog buns
  • For the Cheese Sauce:
  • 1/2 stick unsalted butter
  • 2 tablespoons flour
  • 1 1/2 to 2 cups cheddar cheese (sharp)
  • 1 1/4 cups milk
  • 3 tablespoons pickled jalapenos (diced)
  • 1 teaspoon mustard powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 3 to 4 dashes hot sauce

How to Make It

  1. In a saucepan, melt butter and add flour, stirring well to form a roux. Cook for about 1-2 minutes.
  2. Add milk 1/2 a cup/120 mL at a time while whisking mixture together.
  3. Add cheese and all ingredients except, jalapenos. Whisk until thick and melted through. This process should take about 8-10 minutes total.
  4. Once cheese sauce has reached a good thick consistency, add jalapenos and stir through.
  5. Keep cheese sauce on a warm setting until the hot dogs are cooked.
  1. Preheat grill for medium-high heat.
  2. Wrap each hot dog with a strip of bacon. You might need to cut bacon to fit.
  3. Place hot dogs onto the grill and cook for 8 minutes, occasionally turning until the hot dog is cooked and bacon is good and crisp.
  4. Remove from heat, place into a warmed hot dog or deli bun, top with cheese sauce and serve.
