Bagel Grilled Cheese with Heirloom Tomatoes and Thyme
You probably don't think about using a bagel as bread for a grilled cheese sandwich, but it's totally possible! Just hollow out the exterior of the bagel and you've got yourself a grilled cheese vessel that's totally innovative and completely delicious.
And once you pair that bagel with a smear of tangy cream cheese, some sweet heirloom cherry tomatoes and a few fragrant leaves of fresh thyme, and then grill it with some salted butter—you can create a breakfast grilled cheese... that is truly like none other.

Avocado, Red Onion and Cream Cheese Bagel Sandwich
I'm just going to put this out there in case you didn't know - BAGEL SANDWICHES ARE ONE OF THE BEST THINGS IN THE WHOLE WIDE WORLD! As Kanye West would say "Regular sandwiches, imma to let you finish but bagels make one of the best sandwiches of all time! One of the best sandwiches of all time!"
Now don't get me wrong, most of the time I'm not into heavily bread-y sandwiches but with bagels, well, that's a different story. Their spongy doughy goodness is so nice when... it gets a little bit toasted. Not only does the heat help bring out the flavors of the everything bagel seeds but the crust gets almost a sweet taste that goes so nicely with some the tangy cream cheese. This sandwich also has buttery avocado and some purple onion rings that give it a crunchy and sharp bite.
This sandwich is best when eaten right away but if you couldn't finish it in one sitting, I definitely wouldn't turn down the other half a few hours later.

When you think about open faced bagel sandwiches, lox, or smoked salmon, probably comes to mind. Now take that mental image and keep all of its deliciousness but swap out the smoked salmon for fresh slices of tomato and add everything bagel seeds to help make this open-faced sandwich even more next level. The cream cheese is great as-is, but if you're feeling a little bit more adventurous, add some chopped cucumber and fresh mint. You could even add some turkey on top for a little bit more... protein. The possibilities of making are endless here!

Whether you're into smoked salmon, lox, or gravlax – thisopen-faced salmon bagel sandwich will blow your mind! Pickled red onions not only add an unexpected pop of color but they also add a nice vinegary bite that helps lighten up the smokiness of the salmon. The capers add a salty depth to the sandwich while the scallions add a nice mild onion-y bite.
The goodness doesn't have to stop there either. To make this already mind numbingly delicious sandwich even more opulent, add some... bright red mullet roe or deep dark sturgeon caviar to the cream cheese. Why not go all out and add edible gold flakes to the top? Just kidding. You totally don't have to go that far. Let's be honest, this sandwich is pretty baller on its on in the looks and taste department. One word of advice though, be sure that you're using really good ingredients for this sandwich because it makes all the difference!Continue to 5 of 6 below.

Open-faced Veggie Bagel Sandwich
This open-faced breakfast sandwich was originally created while camping in upstate New York but is totally doable anywhere in the world - but only if they sell (or you can make) bagels of course! Half of an everything bagel is smeared with cream cheese and topped with tomatoes, cucumbers, red onions, scallions, salt and freshly cracked pepper. It's a great way to start the day and because it's open-faced it will help prevent you from starting your day by inhaling a bunch of carbs in the... morning. And if you don't have a campfire, just toss your bagel half in the toaster and let it crisp up in there. It doesn't matter as long as you get a nice texture on the outside of the bread.
And although this sandwich is perfect as-is, it should also serve as a starting point to create even more tricked-out breakfast sandwiches. For example, try adding on smoked salmon and a few capers for a flavorful treat. Or get a little more creative and add a few thin slices of prosciutto with some baby arugula and balsamic glaze. The possibilities are endless here!
