Talk about a decadent St. Patrick's Day cocktail, this is it. The recipe comes from Bailey's Irish Cream and was originally intended to use their mint-chocolate flavored liqueur. It seems as if that was a short-lived product, but that reliable bottle of Bailey's will do just fine.
To make up for that loss in flavor, you can add 1/4 ounce of a mint chocolate syrup. The Irish cream is blended with iced coffee as well as a Guinness-flavored gelato. The entire drink is topped off with a shot of espresso, whipped cream, and fresh mint. It's a truly fabulous dessert drink and something completely unique.
If you cannot find or make Guinness gelato, coffee ice cream is a good substitute.
- Add Baileys, iced coffee, and Guinness gelato to a blender.
- Blend on high with chip ice until smooth.
- Pour into a chilled coupe, hurricane, or ice cream glass.
- Top with espresso, a mint sprig, and whipped cream.

About That Guinness Gelato
Gelato is often described as an Italian ice cream. Yet, gelato often has a distinctly more intense flavor and a different texture than the ice cream you may be used to.
Gelato is soft and creamy because it has more sugar and less air which produces fewer ice crystals.
Finding Guinness gelato is not easy, though it is a flavor that some gelato shops play around with from time to time. In most cases, you'll find it easier to make it yourself. The catch is that you need an ice cream or gelato maker.
This may be too much hassle for the average drinker who just wants to dive into a great frozen cocktail. This is why I recommend coffee (or even chocolate) ice cream in the Bailey's Irish Ice recipe. You can always add an ounce or so of Guinness to the blender while making the drink.
If you would like to try your hand at making your own Guinness gelato or ice cream, it's relatively easy. For a gelato, you will want to use an ice cream maker that also has a gelato setting because gelato is turned at a slower rate. Also, gelato recipes tend to skip the cream and focus on milk, so choose your base recipe accordingly.
Whether you're making gelato or ice cream, getting the Guinness flavor into it is easy. For most standard ice cream recipes, you can simply add about 1 to 1 1/2 cups of stout. You might have to make a few adjustments depending on your recipe, but this is a good formula to begin with.
