Baked Caramel Corn

This easy baked caramel corn is perfect for a family tv snack, party, or game day event.  The popcorn is simply baked at a low temperature with a simple boiled syrup.

What You'll Need

  • 6 quarts popcorn (popped)
  • 1 cup butter
  • 2 cups sugar (brown, firmly packed)
  • 1/2 cup corn syrup (light or dark)
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla

How to Make It

  1. Preheat oven to 250°. Oil or spray a large roasting pan with vegetable cooking spray, regular or butter-flavored.
  2. Pour popcorn into the pan.
  3. In a heavy saucepan, slowly melt butter; stir in the brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat and stir in the baking soda and vanilla.
  4. Gradually pour the syrup over popcorn, stirring to blend well. Bake for 1 hour, stirring every 10 minutes. Remove from oven; let cool completely and break apart.
