These balsamic glazed pork chops make a satisfying family meal with rice, baked potatoes, or noodles. Add steamed broccoli or your family's favorite vegetables. I like cauliflower rice with the chops.

Balsamic vinegar and apricot preserves add flavor to these tasty skillet pork chops. These chops are easy to prepare and a snap to cook on the stovetop.

What You'll Need

  • 1 large sweet onion, chopped
  • 2 tablespoons butter
  • dash leaf thyme
  • 1/2 cup balsamic vinegar
  • 3 tablespoons apricot preserves
  • 1 to 2 tablespoons brown sugar or maple syrup
  • 1 tablespoon extra-virgin olive oil
  • 4 pork chops, about 1/2 to 3/4-inch thick
  • kosher salt and freshly ground black pepper
  • 3 to 4 tablespoons flour
  • 1/2 cup chicken broth

How to Make It

In a medium saucepan or saucier over medium-low heat, cook onions in butter until golden brown and tender, about 15 to 20 minutes. Add thyme, balsamic vinegar, apricot preserves, and sugar or maple syrup. Bring to a boil over high heat; reduce heat to low and simmer for 5 minutes.

Heat the olive oil in a large skillet over medium heat.

Sprinkle chops with the salt and pepper then dust with the flour. Arrange in the skillet and brown on both sides. Add chicken broth and reduce the heat to low; simmer covered for 10 minutes, then uncover and continue cooking for 5 minutes longer.

Add balsamic, onion, and apricot preserves mixture to the skillet. Turn the chops to coat. Cover and simmer for 10 minutes longer.
