This pot roast recipe is cooked with homemade barbecue sauce. Serve the pot roast as an entree or shred the beef and serve it in sandwiches. It's great in tortillas or pita bread with chopped onions, tomatoes, sour cream, or guacamole.

What You'll Need

  • 1 pot roast, beef chuck, about 4 pounds
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup beef broth
  • 1 can (8 ounces) tomato sauce
  • 2 medium onions, sliced
  • 2 cloves garlic, crushed and minced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper, optional
  • 1/4 cup vinegar
  • 1/4 cup ketchup
  • 1/4 cup lemon juice
  • 2 teaspoons Worcestershire sauce

How to Make It

  1. Rub roast with salt and pepper. Brown on all sides in melted butter over medium heat.
  2. Add water, tomato sauce, sliced onions, and crushed garlic. Cover and cook over low heat for 1 1/2 hours.
  3. Mix remaining ingredients together and pour over pot roast. Simmer for 1 hour longer, or until very tender.
  4. Serve with hot buttered noodles or mashed potatoes, along with green beans or asparagus.
