What You'll Need

  • 2 cups diced cooked lamb
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 4 ounces sliced mushrooms
  • 1 1/2 cups cooked rice
  • 2 cans (14.5 ounces) tomatoes
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon curry powder
  • 2 to 4 tablespoons grated Parmesan cheese or shredded Cheddar or other

How to Make It

Cook onion in butter until tender. Add mushrooms and brown lightly. Combine all ingredients except cheese in a greased 2-quart casserole. Top with the cheese. Bake at 350° for 30 minutes, or until hot and bubbly.
