    If you like your poultry perky with spices, succulent and buttery in a pie or a pot, creamy and fresh in a salad there really is something for everyone in these favourite British chicken recipes.

    Seriously, if you like quick, easy, cooking that is also healthy and nutritious then what can be better than chicken. Chicken is also a reasonably cheap meat especially if you use the legs and thighs. 

    I like to buy free-range chicken, if possible organic. If I can't get organic I am happy if it is a...MORE corn-fed bird. Birds raised in the fresh air with room to move and play make for meatier, more flavourful eating;

    If I am roasting a chicken, my favorite is this Lemon Roast Chicken recipe. It is one of the best I have ever tasted. The chicken remains moist and succulent with soft flavors of lemon and garlic.  It is simple to make and makes a great roast for a Sunday lunch served with Yorkshire Puddings or cold for a summer lunch or picnic.
