Chicken sandwiches, like chicken salads, are classics. Whether you make them for a summer picnic, an easy lunch, or for your kid's lunch boxes, they are always in style. Since everybody loves chicken and it's so adaptable to any flavor or cuisine, you can make literally hundreds of varieties of chicken sandwiches. These are my seven favorites. You can vary the flavors, add more cheese or a different type, or use a completely different type of bread to create new favorites.
Make these easy... sandwiches with rotisserie chickens, or use leftover cooked chicken. You can also cook the chicken especially for these sandwiches. Just bake a bunch at a time, let them cool, and take off the meat. Chop or shred the meat, and freeze it in freezer containers. The next time you want a sandwich, just take the frozen chicken out of the freezer, thaw it, and make one of these easy recipes. Then dig in.

The original Waldorf sandwich was invented at the Waldorf-Astoria Hotel. It was made of chopped apples, celery, and a mayonnaise dressing. Add chicken, walnuts, and raisins to this luscious combination and serve it on some rich raisin bread for a wonderful and super easy sandwich.

I was always intrigued by the recipe for Fried Chicken on Waffles, but thought it sounded difficult to eat. So I turned it into this fabulous open faced sandwich! It's so delicious. The combination of tender chicken mixed with mayo, mustard, and celery is perfect on top of hot and crisp waffles. Yum.

This fabulous sandwich is a chicken sandwich in its purest form. You must use the best quality chicken you can find, and make sure it is moist and tender. I like to break down a rotisserie chicken to get the best meat for this wonderful sandwich. Combine with some mayonnaise and mustard and serve on little whole wheat sandwich buns for a pure chicken sandwich experience.

This oldie but goodie is one of the first hot sandwiches I ever made, besides Grilled Cheese! The combination of sweet and tart apple with melty cheese and tender chicken is fabulous pressed between slices of whole wheat bread.
