These leftover chicken recipes can be made with any type of cooked chicken. If you have leftover roast chicken, fried chicken or stir-fried chicken, it all works, provided the chicken isn't coated with a heavy sauce or coating. If it is, you can still use it; just scrape off any bread crumbs or sauces before proceeding with the recipe. Of course, rotisserie chicken works well in all of these recipes, too.
