Fall is probably the most significant season on the cooking calendar. The change from the heat and fresh foods of summer is striking. We move from grilled steak and corn on the cob to comforting casseroles and warming foods. And the major holidays of the year begin in fall. Halloween and Thanksgiving demand special foods and menus.

The foods we buy in the supermarket change too. Berries are no longer in season, but peaches, squash, and dark leafy greens come into their own.

Cooking methods change as well. We bring our slow cookers out of storage, and start making more meals prepared on the stovetop and in the oven.
