Looking for a few ideas for your leftover Easter eggs? Deviled eggs, sandwiches, and egg salads are excellent choices, but hard-cooked eggs also make a tasty and nutritious ingredient or topping for most vegetables and many casseroles and salads. 

Stir them into a potato or pasta salad or add to a casserole's cream sauce. Add chopped eggs to croquettes or tuna salad, or stuff tomatoes with your favorite egg salad.

    Making hard-boiled eggs seems fairly straightforward, but minor mistakes can yield unappetizing results. Here's how to make the perfect hard-boiled egg.

    Though there are a few other ways to cook eggs in the shell, this is the most common, and it's fast and easy. Depending on how firm you like your eggs, you might want to adjust the time several minutes either way. If you like the eggs to have some moisture in the yolk, subtract 2 to 4 minutes from the time. If you like them very dry and...MORE firm, add a minute or two.

    Arrange the eggs in a single layer in a medium saucepan.  Add cold water; the water should be about an inch over the eggs. Cover the pan.

    Place the pan over high heat and bring to a full boil.

    Remove the pan from the heat (don't lift the lid) and let the eggs stand, covered, for 17 minutes for large eggs, or about 19 minutes for extra-large.

    Transfer the eggs to a bowl of ice water until they're cool enough to handle. The freshest eggs might be difficult to peel, but I have good luck peeling them almost immediately after putting them in the ice water. Just keep dunking them as you peel or peel them under running water.

    If you aren't serving the eggs right away, store them in the refrigerator for up to 1 week.
