This basic vegetarian pasta sauce will feed a crowd.  It's a good recipe for a game day gathering or big family meal.

Feel free to add ground meat or pancetta to the skillet along with the vegetables if you want a meaty sauce. 

Serve the pasta with sliced garlic bread and a tossed salad or Caesar salad for a satisfying family meal.

What You'll Need

  • 1/4 c. extra virgin olive oil
  • 1 large carrot, shredded
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 2 (28 oz.) cans crushed tomatoes
  • 2 (28 oz.) cans tomato puree
  • 3 cans (6 ounces each) tomato paste
  • 2 bay leaves
  • 2 teaspoons dried sweet basil
  • 1 teaspoon dried leaf oregano
  • 2 teaspoons seasoned salt
  • 1 cup water
  • 1/2 cup grated fresh Parmesan cheese, optional

How to Make It

Heat oil in a skillet or sauté pan over medium heat; add onion and carrot and garlic. Saute  until onion is translucent. Add tomatoes, puree, tomato paste, and seasonings (basil and seasoned salt), along with 1 cup water; stir to blend ingredients.

Transfer to the slow cooker and cook on low for 7 to 9 hours. About an hour before serving time, check and thin with more water if necessary. Add Parmesan cheese, if using.

Serve over hot cooked spaghetti or similar pasta along with more Parmesan cheese for sprinkling.
