A staple in the Southern diet for over 300 years, black-eyed peas have long been associated with good luck. A dish of peas is a New Year's Day tradition in most areas of the South, thought to bring luck and prosperity for the new year. According to Jessica Harris, author of "Welcome Table," some add a dime to the peas for an extra "boost" of luck to the recipient.

Greens, thought to symbolize folding money, are often eaten with the peas.

On New Year's Day, serve peas with cabbage, collard greens, kale, mustard greens, turnip greens, or other green leafy vegetables. Cornbread or cornbread muffins are thought to symbolize gold, so make sure you have a pan or skillet of freshly baked cornbread to go with the peas and greens.

Hoppin' John, a dish made with black-eyed peas and rice, is one of the more popular ways of serving them, but many people serve their black-eyed peas in salads, dips or soups, or simply cooked with a bit of ham or bacon as a side dish.

Pork and Sausage Jambalaya With Black-Eyed Peas   Ground pork and smoked andouille sausage flavor these black-eyed peas. Use canned or freshly cooked black-eyed peas in this recipe.

Spicy Hoppin' John This dish is a classic combination of black-eyed peas and rice.

I used ham hocks in the dish, but a ham bone and diced leftover ham may be used as well.

Crock Pot Black Eyed Peas and Collard Greens This crock pot dish is made with cooked black-eyed peas, collard greens,bacon,  and a variety of vegetables and seasonings. Cook the peas a day in advance or used canned black-eyed peas.

Hamburger Soup With Black-Eyed Peas and Kale Serve this hearty soup with cornbread muffins for a good luck meal in one dish.
