Serve this fabulous pudding cake with a big scoop of vanilla ice cream or a dollop of whipped cream. Try it warm, it's delicious! 

What You'll Need

  • 2 cups blueberries, fresh or frozen
  • 2 tablespoons lemon juice
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup boiling water

How to Make It

  1. Place blueberries and lemon juice in an 8x8-inch baking dish.
  2. In a medium mixing bowl, mix together flour, baking powder, salt, nutmeg, and 3/4 cup sugar.
  3. Beat in milk, egg, melted butter, and vanilla.
  4. Spread the batter over the berries.
  5. Mix 1 cup sugar with cornstarch and sprinkle over batter. Pour boiling water over all.
  6. Bake at 350° for 40 to 50 minutes.
