This cheesy version of the classic bechamel sauce is perfect for so many dishes that need a mild flavored sauce and the added benefit of cheese.

What You'll Need

  • 5 tablespoons/75 mL butter
  • 1/4 cup/60 mL flour
  • 2 cups/475 mL whole milk (you can use 2% if preferred)
  • 1/2 teaspoon/2.5 mL salt
  • 1/4 teaspoon/1.25 mL pepper
  • 1/4 teaspoon/1.25 mL powdered nutmeg
  • 1/2 cup/120 mL sharp
  • cheddar cheese
  • 1 tablespoon/15 mL grated Parmesan cheese
  • dash of hot sauce (optional)

How to Make It

In a medium saucepan, melt butter and stir in flour to make a roux. Allow roux to cook for 1-2 minutes. Add milk a little at time, allowing the mixture to thicken. Next, add salt, pepper, nutmeg, cheeses, and hot sauce. Continue stirring until the cheese has melted. Remove from heat and use immediately. If making ahead of time, be aware that the mixture will thicken while in the refrigerator. If this happens, add a little milk to the saucepan when reheating the bechamel sauce.
