This chicken divan is a chicken and rice casserole with broccoli and cheddar cheese. Diced cooked chicken is used in the dish, and a simple white sauce with sour cream makes a smooth and creamy topping.
Double the cheese for the casserole if you like lots of cheese.
Feel free to add some chopped green onions and paprika to the topping.
Cook broccoli according to package directions; drain well. Arrange broccoli in 13x9x2-inch baking dish. Sprinkle with half the cheese; top with cubed chicken. Season with salt and pepper; spoon on the cooked rice.
In a saucepan, melt butter over low heat. Blend in flour; add milk. Cook, stirring constantly, over medium heat until mixture thickens and bubbles. Remove from heat; stir in lemon juice and fold in the sour cream.
Pour over chicken. Sprinkle with remaining cheese.
Bake at 400° for 15 to 20 minutes.
Serves 4 to 6.
Tips and Variations

Reader Comments and Suggestions
"We really liked it but the next time I would make a couple of changes. I would use more cheddar cheese and possibly some parmesan add it to the milk, flour mixture to create a cheese sauce. I omitted the lemon juice and added a bit of garlic. We will make it again!" N.L.
"I had broccoli in the fridge kicking around and some boneless skinless chicken thighs and came across this recipe. I didn't have sour cream but used Greek Style plain yogurt and it worked well. Instead of plain white rice, I used broccoli and cheddar rice that I had cooked from a package and it just added an extra kick. I also added a bit of garlic to the sauce. I love it when I can take an easy basic recipe like this and make variations to suit us and what we have at home already. ...Thanks." Ms. A.
"This was really good. We are on a low sodium diet so can't use canned soup, therefore this was perfect. I have made it without the sour cream and also used mozzarella instead of cheddar and it's still very tasty." Carolyn
"My husband and I both enjoyed it, was very flavorful. Was nice to have something that didn't require cream of mushroom soup for a change." N.S.
"I used a small amount of shredded cheese and some Velveeta in the layers. I also used low fat sour cream and brown rice. I browned onion before adding the flour and milk and used garlic, salt and pepper, and paprika to season. It was great! and really easy!" S.W.
