This chili lime sauce is a great side sauce for dipping everything from pork kebabs and chicken tenders, to topping fajitas. It also makes a delicious marinade for any kind of meat.  The choice is entirely yours.

What You'll Need

  • 2 small green serrano chiles (seeded and finely chopped)
  • 1/2 cup lime juice (fresh)
  • 2 tablespoons lime zest (zest of 2 limes)
  • 1/3 cup/80 mL chicken stock
  • 1/4 cup/60 mL cilantro (coriander)
  • 2-3 cloves garlic (peeled and quartered)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • pinch of black pepper

How to Make It

  1. Place all ingredients into a food processor blender.  Blend mixture well.
  2. Bring sauce to a simmer over medium-high heat for 1-2 minutes.  Reduce heat to low and let simmer for 5 more minutes.  Stir occasionally.  Remove from heat and let cool 5-10 minutes before serving.
  3. If using as a marinade, follow the above directions but let the sauce cool for 30 minutes before using.  Marinade beef for 6-12 hours, chicken and pork for 4-6 hours, fish, seafood, and vegetables for 30 minutes.  
  1. Make this sauce ahead of time and store in an air tight container in the refrigerator for up to one week after preparation.
