By starting the Beef Jerky out in your smoker you will get that authentic smoke flavor. You can then complete the drying process in your oven or in a food dehydrator.  

What You'll Need

  • 1 pound/450 g top round steak, trimmed and cut into long thin strips
  • 1/2 cup/120 mL Worcestershire sauce
  • 1/2 cup/120 mL soy sauce
  • 1/4 cup/60 mL brown sugar
  • 4 cloves garlic
  • 2 teaspoons/10 mL fresh ground black pepper
  • 2 teaspoons/10 mL ground dried red chili
  • 1 teaspoon/5 mL onion powder

How to Make It

1. Cut round steak into strips and set aside.  Combine remaining ingredients until brown sugar has dissolves.  Pour mixture into a resealable plastic bag.  Add steak, move around in bag to make sure it is well coated.  Release any excess air from bag, seal and marinate for 1-3 hours in the refrigerator.

2. Prepare smoker for a 4 hour smoke, at about 150 degrees F.

3. Remove meat from marinade and lay out on a sheet of foil.

Spread out the meat evenly. Place in smoker and smoke until the surface begins to blacken, or about 3 hours. Cover the strips loosely with foil. Remember to keep the smoke off while allowing the moisture to escape. Continue smoking for 1 to 2 hours. Meat should be well dried. You can continue to dry the beef jerky in a food dehydrator or in your oven on a very low temperature.
