May 5 is Cinco de Mayo, the day Mexico celebrates its victory over France in the Battle of Puebla in 1862. This festive holiday is a good excuse to make some Mexican inspired food. The holiday is more popular in the US with Mexican-American citizens, celebrated with parades, parties, fabulous food.
These are some of my favorite recipes with a Mexican slant. None are authentic, but all are really delicious!
Choose a few of these recipes for delicious meals and to teach your children a bit about America's neighbor to the south. Or you can go all out and celebrate with an easy and delicious Tostada Buffet. Enjoy!
Cinco de Mayo Recipes
- Mexican Chicken Salad
This beautiful and delicious main dish salad is always a hit. Set out lots of different condiments and let your guests assemble their own fantastic salad creations.
This is the best recipe for guacamole. Make the dip as chunky or as smooth as you like, depending on how much you mash the avocados. Yum.
- Tex Mex Meatloaf
Adding refried beans makes the most wonderful, moist, savory meatloaf you'll ever eat. Add some chopped green chilies or jalapenos to this recipe if you like your food spicier. And serve it with green salsa for the perfect touch
- Fish and Slaw Tostadas
Fish sticks, some make-ahead coleslaw, and tortillas are all you need for a satisfying and super quick Tex Mex entree.
- Mexican Pizza
I invented this recipe a long time ago and it's still one of my favorites. Please take the time this weekend to make the scratch pizza crust. It's really delicious with a wonderful cornmeal crunch.
Quesadillas are sandwiches made by placing delicious fillings between two flour or corn tortillas, then grilling or frying until the tortillas are crisp and fillings hot. They're super easy and super delicious.
- Tex Mex Skillet Lasagna
Black beans, salad, Pepper Jack cheese, and cilantro transform lasagna into a Mexican fiesta. And this recipe cooks completely on the stovetop, so it's easy and fun to make too!
- Enchiladas Verdes
These green enchiladas are one of my favorite foods. I've fiddled with the original recipe from Dinah Shore to make preparation easier, without losing any of the fabulous taste.
- Mexican Peacocks
The fanciful name for this recipe is fun, but doesn't describe how delicious it is! Chicken breasts stuffed with avocado are fried then baked to create an unusual entree that's perfect for company.
- Mexican Tea Cakes
These buttery and rich cookies are the perfect end to a party. They are very easy to make - and it's hard to stop eating them!
- Santa Fe Chicken
I keep the ingredients for this casserole in my pantry and freezer at all times just so I can make it when I'm really exhausted and need some comfort food. The flavors and textures combine for an excellent main dish made in minutes.

This classic dip is beautiful, delicious, and so popular. Make sure you serve it with different types of tortilla chips, especially blue corn chips.
