Cinnamon and Date Chia Pudding

Chia seeds are one of the healthiest foods on the planet. These tiny flavorless seeds pack a nutritious punch, especially when it comes to fiber, protein, and Omega-3 fatty acids.

Chia seeds are an amazing base for pudding because they swell when combined with liquid. The seeds soak up to twelve times their dry weight, thickening a previously watery mixture into a hearty pudding. Combine chia seeds with almond milk, cashew milk, or coconut milk for a naturally creamy, healthy pudding you can flavor in so many different ways. 

I first had a variation of this Cinnamon and Date Chia Seed pudding at a cafe around the corner of my house that specialized in South American cuisine. My husband and I gobbled up the pudding so fast I wish we had ordered a double serving. 

In this particular chia pudding recipe, chia seeds are combined with unflavored almond milk, honey, vanilla paste, ground cinnamon, and plump Medjool dates. The cinnamon and dates really make this recipe, the rich flavor of cinnamon and soft, plump dates coming together in an irresistible combination. 

My almond milk of choice is So Delicious Almond Milk Plus because it contains five times the amount of protein than "regular" almond milk. Medjool dates are the "King of Dates." Large, soft, melt-in-your-mouth nature's candy with a caramel-like flavor. For a more potent vanilla flavor, I use vanilla paste instead of vanilla extract. 

After chilling for a few hours, the chia seeds absorb the almond milk and transform into a deliciously thick pudding that is light and refreshing, but also packed with protein and fiber. The dates soften even more when chilled in the pudding. 

You can eat the chia pudding as is, or top with fresh berries, such as strawberries and blueberries for an even more refreshing breakfast. For added crunch, add almonds, walnuts, or pistachios over top the pudding. 

What You'll Need

  • 1/4 cup chia seeds
  • 1 1/2 cups almond milk
  • 1/2 tbsp honey
  • 1 tsp
  • vanilla paste
  • 1/2 tsp ground cinnamon
  • 6
  • Medjool
  • dates, pitted and quartered

How to Make It

  1. Place all ingredients except dates in a mixing bowl. Whisk together until well combined. 
  2. Stir the quartered dates into the chia seed mixture until just combined. 
  3. Cover and chill overnight, or at least 4 hours. Stir once or twice to de-clump any seeds that may have clumped together.  
  4. Divide chia pudding into two bowls. Top with sliced strawberries, blueberries, and handful of choice of nuts, if desired.
