The cottage cheese in these muffins is a secret ingredient. It simply gives the muffins a moist, dense texture. These muffins aren't overly sweet and have just the right amount of cinnamon; noticeable but not overpowering.
For more flavor, fruit (like blueberries) can be added to the muffin batter and a streusel topping can be sprinkled on top.
- 1 3/4 cup all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup melted unsalted butter or vegetable oil
- 1 teaspoon vanilla
- 2/3 cup sugar
- 2/3 cup cottage cheese
- 2/3 cup milk
- 1 egg, whisked
Optional additions to muffins:
- 1 cup fruit (blueberries, raspberries, chopped strawberries)

Preheat oven to 400 F
Spray or brush a muffin tin with oil.
In a small bowl whisk together flour, baking powder, cinnamon and salt.
In a large bowl whisk together butter or oil, vanilla, sugar, cottage cheese and milk.
Whisk in the egg.
Gently fold in the flour mixture, stirring gently until completely combined.
The batter will be very thick.
Evenly fill all 12 spaces in the muffin tin.
Bake for 15 to 17 minutes or until tops are golden. Let the muffins cool in the muffin tin for 10 minutes before taking out of the tin.

Tips for Making Great Muffins
- Take eggs, butter and milk out of the fridge early enough to come to room temperature
- Use a large rubber spatula to gently fold the dry mixture into the wet mixture, using as few strokes as possible
- Fill muffin tins about 3/4 full
- Bake muffins at a higher temperature (400 F) so they bake evenly, stay moist in the middle, and rise with nicely formed muffin tops.
