This cottage cheese pie is flavored with cinnamon and fresh lemon juice, baked in a pie shell.

What You'll Need

  • 1 (9 inch) unbaked pie shell
  • 3 eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon grated lemon peel
  • 1/8 teaspoon salt
  • 1/2 cup half-and-half
  • 2 cups cottage cheese, small curd, mashed or processed
  • 2 tablespoons flour
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

How to Make It

  1. Put eggs in a mixing bowl; beat. Add sugar gradually, beating well.
  2. Add remaining ingredients and mix well.
  3. Pour the filling into an unbaked pie shell.
  4. Combine 2 tablespoons sugar with 1/2 teaspoon ground cinnamon; sprinkle over the filling.
  5. Bake at 350 F for 30 to 45 minutes, or until a knife inserted in center comes out clean.
