Serve these flavorful old-fashioned country fries with a hearty weekend breakfast or as a side dish with dinner.
This is a basic recipe, but there are plenty of additions you can make to give them more color and flavor. Onions, mushrooms, green or red bell pepper, and herbs are just a few ideas. And bacon, sausage, or ham would make them a hearty side dish. See some of the suggestions below the recipe.

- 6 medium potatoes, cooked, cold
- 3 to 4 tablespoons vegetable oil or shortening
- salt and freshly ground black pepper, to taste
- Slice or dice the potatoes into bite-size pieces; set aside.
- Heat a large, heavy skillet over medium heat. Add the oil or shortening to the hot skillet.
- When the oil is hot, add the potatoes. Cook without stirring or turning until the potatoes are golden brown on one side; turn them over and brown the other side.
- Sprinkle the potatoes with salt and freshly ground black pepper to taste.
- With Onions - Saute about 1/4 cup of chopped onion in the skillet until translucent. Add the potatoes to the onions and continue cooking following the instructions above.
- O'Brien Potatoes - Dice the cooked potatoes and add them to the skillet with about 3/4 cup of finely chopped onion and green and red bell pepper. Cook, while stirring and turning until the potatoes are browned.
- With Herbs - Add fresh chopped chives and parsley to the potatoes just before they are finished cooking.
- Just before serving time, sprinkle the potatoes with a little sweet paprika or a low sodium Cajun seasoning blend.
