Sandy's cream of vegetable soup can be made with any vegetable. Use frozen or fresh vegetables in the soup. 

This is a pureed soup, but you might want to hold some of the vegetables (chopped) aside and add them to the soup after it's pureed.

What You'll Need

  • 1 1/2 to 2 cups mixed vegetables (your favorite, depending on the vegetable and how thick you like the soup)
  • 1/4 cup onion (chopped)
  • 1/3 cup celery (sliced)
  • 1 clove garlic (crushed)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)
  • 1 bay leaf
  • 2 cans chicken broth (condensed, 10 3/4 ounces each, or about 2 1/2 cups of double strength chicken stock)
  • 2 tablespoons butter
  • 2 tablespoons flour (all-purpose)
  • 1 1/2 cups of half and half

How to Make It

In a 3-quart saucepan, combine the vegetables, onion, celery, salt, pepper, garlic, and bay leaf. Add water to the chicken broth to make three cups and add it to the saucepan.

Bring the soup mixture to a boil over high heat. Reduce the heat to low, cover, and simmer until the vegetables are tender. Place a colander over a bowl and drain, reserving the broth in the bowl.

Remove bay leaf and puree the vegetables in a blender with half of the broth.

In another pan, melt the butter and remove from heat. Add flour to the butter and put back over the heat. Cook, stirring, for 2 minutes. Add the pureed vegetables and the half-and-half to the butter and flour mixture. Continue cooking and stirring until the soup is thickened, hot, and well blended.

How to Puree Hot Liquids in a Blender

The steam from hot liquids can easily blow the top off of a blender, so be sure to never fill the blender more than half full. Loosen the center cap in the lid, place a folded kitchen towel over the lid, and hold it down firmly while you puree the soup.
