This recipe is a Creole chicken and rice casserole with sliced andouille sausage, green bell pepper, onion, celery, and tomatoes.

What You'll Need

  • 2 cups cooked rice
  • 2 cups cooked diced chicken
  • 1 tablespoon butter
  • 8 to 12 ounces sliced andouille sausage
  • 1 medium onion, chopped
  • 1 green pepper
  • 1/2 cup chopped celery
  • 1 can (14.5 ounces) tomatoes
  • salt and pepper to taste

How to Make It

  1. Put cooked rice in a buttered 2 1/2-quart casserole.
  2. Place chicken over the rice.
  3. Heat butter in a skillet; sauté andouille sausage with the onion, green pepper, and celery until vegetables are tender. Add tomatoes, salt and pepper; simmer for 10 minutes.
  4. Pour sauce over the chicken and rice. Cover and bake at 350 F for 20 to 25 minutes.
