Try this flavorful no-bean beef and beer chili recipe for the slow cooker. Use a good quality porter or stout in the chili. Or make it with an IPA if you prefer.

This chili is made without beans but if you like beans in your chili, go ahead and add a few cups of canned (drained) beans or freshly cooked beans.

What You'll Need

  • 2 to 3 pounds lean beef cubes
  • 1 cup chopped onion
  • 3​ cloves garlic (minced)
  • 1 teaspoon salt
  • 2 to 3 tablespoons jalapeno pepper (chopped)
  • 1/4 cup New Mexican chile powder
  • 2 teaspoons ground cumin
  • 1 cup good quality dark beer (such as a porter or stout)
  • 1/4 cup​ beef stock or water
  • 2 tablespoons masa harina blended with 2 tablespoons water

How to Make It

  1. Heat the oil in a large skillet over medium heat. Add the beef cubes and onion and cook until the beef is browned and the onion is softened. Drain off excess fat and add the garlic; cook for about 1 minute longer, stirring constantly.
  2. Transfer the beef and onions to the slow cooker; add salt, pepper, chile powder, cumin, beer and broth or water.
  3. Cover and cook on low for 8 to 10 hours.
  4. Stir the masa and water mixture into chili about 30 minutes to 1 hour before done. Turn to high and cook uncovered the remaining hour, adding a little more broth or water if necessary.
  1. Serve with cornbread or with hot cooked rice, if desired.
