This menu is a wonderful choice when Easter falls early in spring, or when the weather is cold. Nothing welcomes guests more than the aroma of a delicious roast, seasoned with garlic and onions, wafting through the air. And because you are using your slow cookers, this menu is very easy on you. You'll have more time to interact with your guests and have a great time at your own party.

Cooking the main dish and all the side dishes in the crockpot is a wonderful way to entertain.

The aromas alone will entice your guests into the house. A simple spinach salad and a decadent make-ahead pie for dessert are all you need to complete this elegant meal.

Set your table with some pretty china and your best stemware and flatware. Because it's Easter, some fresh flowers or dyed Easter eggs on the table would be very appropriate. Have a fire going in the fireplace if it's cool outside, and play some nice music on your stereo.

    I love this easy and rich recipe that's perfect for a party. Serve it with crudites such as baby carrots, celery sticks, bell pepper strips, and strips of zucchini or yellow summer squash. You could also offer breadsticks or crackers.

    A roast cooked in the crockpot is a wonderful idea for entertaining. It's moist, tender, and succulent. And don't worry about the horseradish - it becomes very mild during the long cooking time. If you don't like it, just leave it out, or reduce the amount.
  • Sour Cream Crockpot Potatoes
    Of course, you have more than two crockpots, so it's a simple matter to cook the main dish in one and a side dish in another. What will you do with all your extra time? Perhaps dye some more Easter Eggs?
  • Sweet and Sour Spinach Salad
    Baby spinach is fabulous raw; it's tender, sweet, and perfect with this sweet and sour dressing. You could add a number of vegetables to this salad; I personally like adding strips of different bell peppers along with some sliced mushrooms and some tiny, sweet grape tomatoes.

    And this decadent dessert is a great finish to the perfect meal. This is the pie I must have at every Easter dinner. It's suave, smooth, velvety, with a wonderful tart lemon flavor and the most light and fluffy meringue.
