- 1 (2 to 3 pound) boneless beef chuck roast
- 1 tablespoon Cajun seasoning
- 1 onion, chopped
- 1 (14 ounce) can diced tomatoes with garlic, undrained
- 1/2 to 1 teaspoon Tabasco sauce
- 1/8 teaspoon pepper
Sprinkle Cajun seasoning over the roast and rub to coat well. Place the coated beef in a 4 to 6 quart slow cooker and top with the onion.
In a small bowl, combine the tomatoes with their juice, hot pepper sauce and pepper. Pour this mixture over the vegetables and the roast.
Cover the crockpot and cook on low setting for 8 to 10 hours or until the beef is very tender. Remove the beef from the slow cooker and place on a serving platter.
Using a slotted spoon, remove the onions and tomatoes from the slow cooker and spoon over the beef. Serve with the liquid from the crockpot.
