This slow cooker crockpot casserole is a flavorful side dish, and it goes well with a baked ham dinner or roasted pork or chops.

I cooked this pineapple casserole in an 8-inch souffle baking dish, which fit perfectly inside my large oval slow cooker. You may use a 3- to 3 1/2-inch buttered slow cooker as well.

What You'll Need

  • 1 can (20 ounces) crushed pineapple, undrained
  • 1/4 cup evaporated milk
  • 1 cup packaged cornbread dressing crumbs 
  • 3/4 cup sugar
  • 1/4 cup melted butter or margarine
  • 3  large eggs, beaten

How to Make It

  1. Lightly butter the bottom and sides of a 3 1/2-quart slow cooker (or use a baking dish that fits in a larger slow cooker).
  2. Combine all ingredients; blend well. Pour the pineapple mixture into the slow cooker.
  3. Cover and cook on high 2 1/2 to 3 hours.
  4. Serve with baked ham, roast pork or chops, or smoked pork shoulder.

Recipe Tip

This casserole may also be made with lightly seasoned or unseasoned toasted bread cubes.
