Crockpot Roast Beef Dinner

This crockpot Roast Beef dinner recipe is tender and delicious, and it's a meal in one pot. There's nothing like a slow cooker to make the best roast beef, even from a cheap cut that is tough. The moist heat of the slow cooker turns beef into a meltingly tender, flavorful treat that is good enough to serve to company.

You can make your own Beau Monde Spice Mix if you can't find it in the grocery store. Or you can substitute your own favorite spices. I would make this recipe using dried marjoram and some dried basil.

This really is a meal in one, but you can add a green or fruit salad if you'd like. A glass of red wine and some brownies for dessert complete this easy and delicious dinner.

What You'll Need

  • 4 pound boneless beef top round roast
  • 1 teaspoon Beau Monde Spice Mix
  • 1/2 teaspoon lemon pepper
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1 cup sliced celery
  • 1 (16 ounce) package baby carrots
  • 3 potatoes, quartered
  • 1 cup dry red wine or beef broth
  • 1 teaspoon sugar
  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons tomato paste

How to Make It

Sprinkle the roast with Beau Monde seasoning and lemon pepper. In a large Dutch oven or a heavy skillet, brown the roast on all sides in hot oil over medium heat; drain well. Place the onions, celery, garlic, carrots, and potatoes in a 4 to 5 quart slow cooker and place the roast on top.

In a medium bowl, mix together the wine or broth, sugar, tomato sauce, and tomato paste and pour it over the roast. Cover the crockpot and cook on low for 8 to 10 hours, until vegetables are tender and roast is cooked and is very tender.
