Sauerbraten is a tasty European style pot roast made with vinegar and spices. Gingersnaps add flavor and they act as a thickener.

This crock pot version is super easy to fix. Serve the beef with braised red cabbage and potatoes.

Crock Pot Beer-Braised Pot Roast

What You'll Need

  • 1 lean chuck or top round roast (about 4 lbs.)
  • Dash of salt and pepper to taste
  • 2 medium onions (quartered and sliced)
  • 1 (10 3/4 oz.) can condensed beef broth or about 1 1/2 cups​ concentrated beef stock
  • 1/3 cup packed brown sugar
  • 1/3 cup cider vinegar or red wine vinegar
  • 8 gingersnaps
  • hot cooked noodles or​ boiled potatoes

How to Make It

  1. Sprinkle roast on all sides with salt and pepper.
  2. Place the beef in slow cooker; add onion, beef broth, brown sugar, and vinegar.
  3. Cover tightly; cook for 4 to 5 hours on HIGH, turning occasionally.
  4. Remove roast to a warm serving platter and keep warm.
  5. Add crumbled gingersnap to the sauce in the slow cooker. Stir until sauce thickens.
  6. Slice meat and spoon sauce over slices.
  7. Serve with hot cooked noodles or boiled potatoes.
