What You'll Need

  • 4 to 5 pounds/1.8 to 2.2 kg. beef back ribs
  • 1/4 cup/60 mL kosher or sea salt
  • 2 tablespoons/30 mL brown sugar
  • 1 tablespoon/15 mL black pepper
  • 1 tablespoon/15 mL chipotle chili powder
  • For the Sauce:
  • 1 cup/240 mL ketchup
  • 1/2 cup/120 mL dry red wine
  • 1/3 cup/80 mL brown sugar
  • 2 tablespoons/30 mL olive oil
  • 1 tablespoon/15 mL soy sauce
  • 1 tablespoon/15 mL apple cider vinegar
  • 1 tablespoon/15 mL chipotle chili powder
  • 1 teaspoon/5 mL Worcestershire sauce
  • 1 teaspoon/5 mL garlic powder
  • 1 teaspoon/5 mL cumin

How to Make It

Trim excess fat from beef ribs. Combine salt, pepper and chili powder. Rub over the ribs. Preheat grill and prepare for indirect grilling with a drip pan. Place ribs on grill over drip pan and close the lid. Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F. or 130 degrees C.).(For more on smoked beef ribs see Beef Ribs.)

In a medium saucepan, add olive oil, garlic, chipotle powder, and cumin.

Allow to heat through while stirring, for 1 minute. Add red wine and brown sugar. Simmer for 2-3 minutes. Add in soy sauce, vinegar, ketchup, and Worcestershire sauce. Simmer for 2 minutes more. Remove from heat, allow to cool slightly before using.
