Chocolate pies are delicious and fun to serve. Now they can be easy to make too! All you need is a pie crust, whether homemade or purchased, and a sweet, decadent filling.

The secret to great chocolate pies is in the chocolate you use. Good quality chocolate chips, bar chocolate, and cocoa powder are key. Don't buy generic or off-brands for these recipes, since the chocolate is really the main ingredient.

To work with chocolate, keep things dry and relatively cool. Never melt chocolate over high heat, and keep water away from melting chocolate at all costs. If a tiny bit of water gets into chocolate while it's melting, it will 'seize', or suddenly turn lumpy and hard. If this happens, stir a bit of flavorless vegetable oil (NOT butter) into the mixture and it may smooth out. If it doesn't, you'll need to start over.

And I always sift my cocoa powder before using it. Cocoa powder can develop serious lumps that can never be stirred out, no matter how long or hard you beat it. So take a few seconds for that extra step.
