As I was watching Nigella Express (my favorite show), I saw her make a bread pudding, and I remembered the first recipe I ever saw in a fiction book. Mrs. Coverlet's Magicians is a wonderful story. In it, Mrs. Coverlet and the youngest Persever invent a new recipe - Chocolate Chip Bread Pudding. And the intrepid housekeeper goes on to win a national baking contest for her exciting new recipe! After all, we crave comfort foods.
Giving them a twist is always exciting. And if they're quick and easy, even better!
Most comfort foods, as we know, are warm, soft, flavorful foods that remind us of our childhood (a safer time, if only in our memories). Make some of your favorite comfort foods this week, and try some of mine.
Quick and Easy Comfort Food Recipes
- Mrs. Coverlet's Bread Pudding
Here's my take on the recipe from the children's fiction book. Savor the smooth creaminess of this pudding as you read about Mrs. Coverlet, or your own favorite children's book, for a double dose of comfort.
- Danish Puff Coffee Cake
This is one of the first recipes I remember making; in fact, I pretended I was Graham Kerr (the Galloping Gourmet) teaching an invisible audience! This is a wonderful recipe; try it this week.
- Indulgent Macaroni and Cheese
This recipe is a little more complicated because you have to reduce the chicken broth and cream to get the desired concentrated flavor. But it's so worth it.
- Crockpot Mashed Potatoes
Oh, yum. Lots of cream cheese and butter catapaults this fantastic recipe to the top of the comfort food list.
- French Toast
Try making French Toast for dinner! This easy recipe can be served with cheese sauce or chili for a savory dinner. Or bring on the maple syrup and powdered sugar for a traditional treat.
- Cherry Dessert
I love this recipe. It's a definite throwback to the 1960s and absolutely delicious.
- Crispy Skillet Cookies
This very, very old recipe for no-bake cookies is made by melting dates with sugar in a skillet, then stirring in rice krispies and rolling the cookies in powdered sugar. They are luscious!
- Chocolate Layer Cake with Peanut Butter Frosting
Chocolate and peanut butter are, of course, the world's most perfect food combination. This easy and rich cake recipe has been in my files for years.
- Beef Cheese Pan Quiche
I'm making this delicious, easy quiche-like pizza for dinner tonight. With a green salad and some fresh fruit, this is one of the best meals.
- Pecan Pie Brownies
If you love pecan pie and brownies, you'll swoon over this recipe. It's so rich and delicious, it will be gone in no time.
- Roast Chicken with Almonds
This super simple recipe is full of flavor, and it's so easy. Just some cans of soup, Alfredo sauce, almonds, and cheese turn chicken into comfort food.
- Alpine Meatballs
This recipe is a variation of a cheese recipe contest I judged back in the 1990s. The tender meatballs are covered in a wonderfully rich, savory Swiss cheese sauce.
- Meaty Hash Brown Potato Casserole
This wonderful combination of tender meatballs, hot potatoes, a rich cheddar sauce and tiny peas is one of the best casseroles ever. So comforting!
- Bean and Bacon Soup
Bean and Bacon soup is one of the first condensed soups I remember eating as a child. This scratch version is my mother's recipe, and far superior to the canned version. When this soup is simmering on the stove, it feels like home. Crockpot directions are included.
