For a super easy and delicious Valentine's Day, use your slow cooker. Make your Valentine's Dinner entirely in the crockpot (except for the salad, of course - and the toasted nuts) and come home to find your dinner ready to eat. It's just as good as having a chef cook your dinner, except you have to clean up. Oh well.
The toasted nuts and fruit salad can be made ahead of time, so all you have to do is serve the food and eat.
You do need three crockpots for this menu; but you really should have that many anyway.
The Beef Stroganoff is a fabulous recipe, with tender beef in a rich sauce, onions, garlic, and baby carrots. Serve it over hot cooked egg noodles, or over the Crockpot Wild Rice Pilaf in this menu. If you plan to use egg noodles, think about tossing them with some butter, sour cream, and Parmesan cheese before you top them with the stroganoff for an extra special touch.
The green salad in this menu is simple, easy, and a nice contrast to the richness of the entree. And the dessert is rich, chocolatey, smooth, and so simple to make.
Set your table with your prettiest china, flatware, and stemware. Put some fresh flowers in a low vase in the center of the table. Add some soft music and perhaps a fire in the fireplace for a wonderfully romantic and easy dinner. Enjoy every bite.
