This easy homemade coffee cake is baked in a square pan with a delicious cinnamon-spiced brown sugar and pecan topping. 

The buttermilk cake is made from scratch, but it couldn't be easier, and the topping is a snap to prepare. 

What You'll Need

  • 2 cups all-purpose flour, 9 ounces
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/3 cup shortening
  • 1 large egg, beaten
  • 1/2 cup buttermilk, well shaken
  • For the Topping:
  • 1/2 cup brown sugar, light or dark
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • 1/2 cup chopped pecans

How to Make It

Heat the oven to 350° F (180° C/Gas 4). Grease and flour an 8-inch cake pan (round or square). 

Sift together flour, sugar, baking powder, salt, and soda. Cut in shortening until mixture resembles coarse meal. Combine egg and buttermilk; stir into the flour mixture. Spread in the prepared cake pan. 

Combine the brown sugar, cinnamon, melted butter, and chopped pecans. Sprinkle the topping over coffee cake batter.

 

Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.

  • "I reduced the sugar and brown sugar by adding 1/2 sugar and 1/2 cup of Splenda and used half and half instead of buttermilk. I also used 1 tablespoon of baking power instead of 2 teaspoons. By using soybean oil instead of the shortening, the cake was more moist and even though the cake itself was less sweet, the crumb topping balanced out the sweetness with half brown sugar and half splenda.  This is a wonderful moist crumb cake and now my favorite recipe: definitely 2 thumbs up with half the sugar, fat.
