Easy Icebox Fruitcake with Graham Crackers

Icebox cakes require no baking! This is an easy icebox fruitcake recipe with delicious crunch thanks to the graham crackers, almonds, and candied cherries.

What You'll Need

  • 1 cup chocolate chips (semi sweet)
  • 8 tbsp butter (4 ounces)
  • 2 tbsp milk
  • 1/2 cup sugar
  • 1/3 cup candied cherries
  • 2/3 cup almonds (sliced)
  • 2 tbsp raisins
  • 4.8 oz graham crackers (1 sleeve, or 1/3 of a standard box)

How to Make It

  1. Line an 8-inch square or round pan with a large piece of foil. Press carefully into pan; do not tear the foil.
  2. Chop cherries.
  3. Break graham crackers into small pieces in a bowl, add cherries.
  4. In a saucepan, melt chocolate chips with butter then add milk; stir over low heat.
  5. Add raisins and almonds to the cracker mixture.
  6. Pour chocolate sauce over cracker mixture and mix well. Spoon mixture into cake pan and press more cherries on top.
  1. Cover cake with foil and press down firmly.
  2. Put cake in refrigerator to chill for 2 to 3 hours.
  3. Lift out of the pan and remove foil.
  4. Store cake in refrigerator.
