Easy Meatballs in Mushroom Sauce

Homemade meatballs are becoming a lost art. With so many readily available frozen meatballs, you may not have rolled ground beef in your hands in some time. This recipe will take you back and give you the freshness and flavor that only a made-from-scratch meatball can offer. Whether you have a big or small family, this recipe for meatballs in a mushroom sauce can please everyone. It's also quick-to-fix and incorporates, simple ingredients you have in your refrigerator and pantry. Make more than you need and freeze for easy meals with even less time than the hour or so this recipe takes.

How to Make It

  1. In a large bowl combine beef, oats, onion, garlic powder, seasoned salt, pepper, eggs, and 1/2 cup milk (mixture will be soft).
  2. Using about 2 tablespoons of mixture per meatball, shape 18 to 20 meatballs.
  3. In a large skillet melt butter and oil and brown several meatballs at a time, turning carefully with a spatula.
  4. As meatballs brown, remove to a 13 x 9 x 2-inch baking dish.
  5. To the drippings in skillet add the remaining 1 cup milk and the soup; cook and stir just until mixture begins to boil. Pour over meatballs.
  1. Cover and bake at 350F for about 60 minutes or until meatballs are thoroughly cooked.
  2. Serve over mashed potatoes or noodles.

Cooking Tips and Ingredient Substitutions

Meatballs are easy to make for kids, and while they won't always go for the sauce, it's rare that a child won't eat a well-made meatball without sauce, you might be in trouble. If your child or children you will be serving are picky eaters, leave the sauce for the adults to add. You might try leaving the mushroom soup on the side and showing them how to dip their meatballs after they've successfully started eating the meatballs plain. Also, familiar condiments, such as ketchup or barbecue sauce can get the pickiest eater in a dipping mood.
