This microwave peanut brittle recipe is made with Karo syrup, sugar, dry roasted peanuts, margarine, and vanilla.

These directions are for a 1000 watt microwave oven. If your wattage is lower, adjust the time accordingly. See Candy's note below the recipe.

What You'll Need

  • 1 cup sugar
  • 1/2 cup white Karo syrup
  • 1/8 teaspoon salt
  • 1/2 cup dry roasted peanuts
  • 1 teaspoon margarine
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

How to Make It

Line a baking sheet with foil and butter or spray with nonstick cooking spray.

In a microwave safe bowl, mix sugar, Karo corn syrup, and salt. Cook in the microwave oven (100% power) for about 4 minutes, or just until amber colored.

Remove the candy from the oven (it's very hot, be very careful) and add the peanuts; cook about l to 2 minutes longer.

Remove it from oven add the margarine, baking soda, and vanilla all at once, and mix thoroughly and spread it out on the prepared baking sheet, ( this sets up quickly).

Cool, then break the peanut brittle into pieces and put in a container with tight-fitting lid.

Candy's Note: "My microwave is 1000 watts, so I really don't leave my brittle in too long. I make this all the time - it is very easy and delicious. I usually take the margarine, baking soda, and vanilla and put it together in a bowl, so I can work quickly with it. I also spray my pan in advance, so that it will be ready for me."
