A stovetop smoker delivers amazing flavor with very little effort. And salmon is a particularly effective food to cook in a stovetop smoker; after 20 minutes in the smoker, the salmon is buttery-tender and takes on a rich, subtly smoky flavor. Alder is a classic wood chip pairing, but you can use your favorite type of wood chips to make this smoked salmon recipe. For more detailed instructions, look at my tutorial on How to Smoke Salmon.

What You'll Need

  • 1 tablespoon wood chips, preferably alder wood
  • 4 salmon fillets, pin bones removed (skin on or off)
  • 1/4 cup teriyaki sauce

How to Make It

  1. Place wood chips in a pile in the bottom of a stovetop smoker. Place the drip pan and the rack in the smoker.
  2. Place the salmon on the rack and brush the top and sides of each fillet with teriyaki sauce. Close the smoker lid partially, leaving a few inches ajar. Place on the stove and turn heat to medium. When smoke appears, close smoker cover completely.
  3. Cook for 17 to 20 minutes, until salmon is opaque.
