This turkey and rice casserole is very east to make with cooked rice, vegetables, cooked diced turkey, and an easy sauce made with cheddar cheese. If you prefer homemade, see the expert tips for an easy homemade cheese sauce.

This is another great way to use that leftover holiday turkey. Or cook a turkey breast or whole turkey for the meat.

What You'll Need

  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 2 cups cooked rice
  • 1 cup frozen peas, thawed
  • 2 to 3 cups cooked diced turkey
  • 1 can (10 1/2 ounces) condensed Cheddar cheese soup
  • 1 cup milk
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1/2 cup soft bread crumbs tossed with 2 to 3 teaspoons melted butter

How to Make It

Heat the olive oil and butter in a heavy skillet; add the chopped onion and celery and cook, stirring, until tender.

In a large bowl, combine the cooked rice, peas, turkey, soup, milk, mustard, salt, and sautéed onion and celery.

Transfer to a 2-quart shallow baking dish; top with buttered breadcrumbs. Bake at 350° for 30 to 40 minutes, or until heated through.

Expert Tips

Replace the cheddar cheese soup, milk, mustard, and salt with this homemade cheddar cheese sauce.  Heat 2 tablespoons of butter in a medium saucepan. Add 1 1/2 tablespoons of flour and 1/2 teaspoon of ground mustard. Cook, stirring, for 2 minutes. Gradually add 1 1/2 cups of milk. Continue cooking, stirring, until thickened. Add 1 1/2 cups of shredded cheddar cheese and continue cooking until the cheese has melted. Add salt, to taste.
