When you need an appetizer in a hurry, this is a fabulous recipe. You can keep all of the ingredients on hand and they assemble in minutes. In fact, the longest time period in this recipe is baking the frozen meatballs!

Filo Meatball Bites is a simple four ingredient appetizer recipe using frozen meatballs, frozen mini filo (or fillo or phyllo) shells, cheese, and pizza sauce. That's it! They're perfect for your Super Bowl party or anytime you need an appetizer. They look great on an appetizer tray and are very easy to eat, which is a bonus if you are serving a lot of people.

You could use any type of sauce and cheese in this fabulous recipe. Pick chicken meatballs, roll them in Buffalo wing sauce and top with blue cheese. Coat the meatballs in chili sauce and grape jelly and top them with Parm. This recipe is versatile; you get the idea! Yum!

What You'll Need

  • 15 mini frozen filo shells (2 packages)
  • 30 meatballs (frozen, precooked)
  • 2/3 cup pizza sauce
  • 1 cup Cheddar cheese (shredded)

How to Make It

Preheat the oven to 400°F. Place the mini filo shells on a baking sheet. Or you could put them into mini muffin cups for more stability; the little shells tend to roll around.

Put the frozen meatballs on a cookie sheet with sides; bake the frozen meatballs as the package directs; mine says for 18 minutes at 400°F.

Put the pizza sauce in a medium bowl; add the cooked meatballs and stir them gently with a wooden spoon to coat.

Using tongs or a small fork, place one meatball into each filo shell, then top with a bit of the shredded Cheddar cheese.

Bake the little stuffed filo shells for another 4 to 6 minutes or until the cheese melts. Serve these little appetizers immediately.
