Five Easy Muffin Recipes
Here are five delicious muffin recipes that you can whip up in about half an hour. Remember, for tender muffins, don't overmix the batter. Also, oven temperatures can vary greatly from one oven to the next. So take note of whether your oven tends to run hot or cool and adjust the cooking time accordingly.
Paper muffin liners are a great convenience in that they make it easier to clean your muffin pan, and they produce a nice tidy-looking muffin. But be careful when you... spoon in the batter because the paper liners can flop over and make a bigger mess than if you didn't use them at all.

This is the basic muffin recipe which can be prepared just as it is or easily modified by adding fruit, nuts, chocolate chips or whatever suits your taste. For a nice touch, you can make up a batch of this cinnamon streusel topping.

You can make these blueberry muffins with frozen blueberries — just rinse them off first and dry them with a paper towel. But fresh blueberries are the best. You can sprinkle these muffins with coarse-grained sugar, which makes them look nicer and also adds sweetness and some texture.

If you love chocolate chip cookies, you'll love these chocolate chip muffins. Muffins are a natural medium for chocolate chips, and we use semi-sweet chocolate chips for this recipe. But you can substitute milk chocolate chips, peanut butter chips, butterscotch chips — even M&Ms.

You'll hear a lot of strong opinions about whether corn muffins should be sweet. In my view, both sweet and savory corn muffins are perfectly delicious. I happen to prefer the sweet kind, but if you don't, all you have to do is leave out the sugar.
