This is a delicious corn pudding that comes out tasting light and fresh. This corn pudding calls for fresh corn, you could use thawed frozen corn as well. The fresher the corn, the sweeter the pudding.

Add some finely chopped onion and bell pepper for flavor and color.

What You'll Need

  • 2 cups fresh corn kernels
  • 2 eggs
  • 2 tablespoons melted butter
  • 2 cups milk, scalded
  • 1 green bell pepper, finely chopped, optional
  • 2 tablespoons finely chopped onion, optional
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

How to Make It

  1. In a large bowl beat eggs; whisk in milk and melted butter.
  2. Add corn, green bell pepper, onion, and seasonings.
  3. Pour into a greased 1 1/2-quart baking dish.
  4. Set dish in a large shallow pan of hot water and bake at 325° for about 1 hour, until corn pudding is set. A knife should come out clean when inserted in center.
